Valtènesi con Gusto on March 17 with chef Bresciani

After making its debut on March 10, the 2017 edition of “Valtènesi with Taste”, the wine and food tour in nine dinners dedicated to the colors, perfumes and all the fascinating nuances of Garda Dop extra virgin olive oil, is ready for its next move The second stop on the itinerary is planned for the evening of Friday, March 17 at Antica Cascina San Zago in Salo, realm of chef Carlo Bresciani, one the most attentive and appreciated defender of cuisine and traditions of the Garda basin. Also known as deputy chairman of the Federation of Italian Chefs, Bresciani is a shy character but very dynamic, long active in terms of the enhancement of typical products of the lake, which he has always also used in recipes of his restaurant, dominating a carte where his ancient love for Japan often peeps out. His dishes are intense and precise, finding a natural balance between respect for tradition and a measured innovation, never unnecessarily over the top. Born from the renovation of an old 1600 convent, recently introduced in the team of the Garda Wine and Food Road, the Cascina San Zago is located on a hill that dominates the entire Salò scenario. Here mister Bresciani awaits you on the evening of the 17th with a tantalizing menu especially created for the event organized by the Consorzio DOP Garda and Strada dei Vini del Garda in collaboration with Lombardy East: Here it is:

 

Cream of cauliflower with cod and season vegetables

 

Cannelloni stuffed with potatoes with Garda Dop Oil and Amatriciana octopus

 

Roulade of rabbit cooked in oil with pepper granita

 

Small Bignolata with lemon cream and oil powder

 

The extra virgin of the evening will be the one produced by Novello Cavazza farm in  Manerba del Garda, while the guest winery is Zuliani in Padenghe sul Garda, one of the historical brand of Valtènesi viticulture known for its rigorous interpretation and at the same time innovative of the native vine Groppello.
