Lake Fish, the festival goes on in Soiano

Second stage for the Lake Fish Menu Festival 2016, which includes 15 dinners until next December 16 in as many restaurants on the Road of Wines and Flavours of Garda. Next event is scheduled for Friday, September 16 at the San Rocco restaurant in Soiano, a really charming place, rooted in history, obtained from the patient, conscientious restructuring work of an ancient Franciscan convent of the thirteenth century, which has preserved both original stone walls and ceilings.

The place is owned by the Manestrini family, historically known in the area as producer of extra virgin quality olive oil and for the olive mill of the same name located always in Soiano not far from the restaurant (read here the story that we published a while ago on Garda Expo: http://www.gardaexpo.com/en/manestrini-a-vocation-for-oil/), who four years ago took over the direct management of the restaurant under the direction of Paolo Manestrini. An unchanged feeling of well being and peace still characterizes the place, where chef Michele Musio, from Puglia, but now based on Garda, focuses on a cuisine especially based on fish, balanced between lake and sea with a respectful view of the seasonality of raw materials, and of course a prominent place for the extra virgin olive oil Garda Dop of the family mill. The lightness of the dishes and attention to local productions are two constants of the gastronomic proposal, mainly accompanied by wines from the Brescia shore of Lake Garda.

 

So here is the menu designed by Michele Musio for event-dinner of Friday 16th:

 

Crispy pike with pink potato, carrot spaghetti and green sauce

 

The Gragnano Pacchero creamed with Torbole Broccoli and crispy Carpione

 

Fish & Chips in extra virgin olive oil from Garda flavored with lemon

 

Lemon pudding of Lake Garda with drops of oil and flavored caramel.
