A recipe to enjoy Garda sardines

Sardines are among the most common and sought after fishes of Lake Garda. Here’s an original way to prepare them in a recipe that Saulo Della Valle, chef of Osteria H2O in Moniga del Garda, has decided to share with Garda Expo readers.

Citrus Sardines with Green Broccoli and Mustard Sauce

Ingredients

4 lake sardines

200 gr. Green broccoli tops

100 gr. Extra virgin olive oil

1 tablespoons of Senape Antica

2 tablespoons normal mustard

1 grapefruit juice

1 orange juice

4 slices of sandwich bread passed in the mixer

Grated orange zest

Grate Lemon zest

Thyme, marjoram, chervil, chopped

Garlic oil

White wine vinegar

30 gr. Parmesan cheese

salt and pepper

4 lemongrass sticks cut in half

Dried orange peel mixed until it becomes powder

Preparation

For the sauce:

In a bowl emulsify a tablespoon of senape antica and one of normal mustard, 100 gr. of extra virgin olive oil until obtaining the consistency of a soft mayonnaise, at this point add the juice of an orange and a grapefruit.

Prepare the fillets of lake sardines, scaling them but leaving the skin. Marinate the fillets for 15 minutes in orange juice, salt, pepper and garlic oil. Blanch the broccoli and cool them.

Remove the fillets from the marinade and dip in breadcrumbs made with toasted sliced ​​bread passed in a pot with a little oil and garlic flavored with all herbs, Parmesan cheese, salt, pepper and the chopped citrus skins. Roll the fillets around the sticks of lemongrass, then lay on a tray and bake at 200 ° C. for 5/6 minutes. Season the broccoli with salt, white wine vinegar, garlic oil. Create a center of the dish with broccoli, put on 2 fillets, drizzle with citrus sauce and sprinkle the dish with orange dust.
