One night in Garda for monsieur Ducasse

Alain Ducasse king for one night in the kitchens of the Lido 84 restaurant in Gardone Riviera, Lake Garda: the great French chef, one of the myths of world cuisine, made his appearance on July 9 on Lake Garda as part of the “Grand Gelinaz Shuffle”, a major event in which 37 world-renowned chefs, from San Francisco to Melbourne, exchanged their restaurants for a day. In the “dream team” there was also Riccardo Camanini, chef of the Lido 84, that on the evening of 9 was sent to Faviken Magasinet in Jarpen, Sweden, while the “myth” Ducasse took possession of its kitchen. Each chef had to prepare an exclusive dinner at the same time made up of eight courses.

The presence of Ducasse was revealed only at the start of the evening, to everyone’s surprise: the great chef, assisted by his colleague, the famous Franck Cerutti of the Louis XV in Monte Carlo, has articulated the menu with nine courses: he paid tribute to the Garda and its flavors, with Bagoss Risotto with Saffron and Reduction of Groppello, as well as the Marinated Perch with Peach and Verbena, but expressed the best of his art with the simple but fascinating Tomato Water and Pan Bagnat and with a simply sumblime John Dory confit with fennel, olives and lemons of Garda. “We have witnessed a unique opportunity – said Enzo Vizzari, director of the Espresso Guide, ambassador of the evening -. Mister Ducasse has created for us dishes that did not exist before. ”
