Here’s the new autumn-winter menu from Lefay

Respect for the seasons, Mediterranean tradition, local producers, ethics, Italian Style: these are the principles of the Lefay Vital Gourmet philosophy applied to the new Lefay Vital autumn-winter 2015-16 menu launched by restaurant La Grande Limonaia, which will be open as usual also in the cold months at Lefay Resort & Spa Lago di Garda in Gargnano. To build the new “carte”, executive chef Matteo Maenza says he was inspired by the changing seasons in the breathtaking scenery of Lake Garda.

“The landscape around me changes every day, with the colors of the seasons, and these ingredients are found in all the dishes where i try to tell the philosophy of Lefay Vital Gourmet – says the young chef -. My cuisine is essentially vegetable: vegetables and greens in their forms and their colors are the primary elements on which I build the recipe, thinking only after to the protein to match. ”

Among the courses presented, stand Lake Sardines Lake (Crispy Sardines, white polenta, pil pil emulsion and dehydrated raspberries), Gnocchi (Pumpkin gnocchi, Martinengo potato cream with nuts, Parmesan crumble), and the classic Brescia Kid (pictured, a variation of local kid Alpe del Garda with salt parsnip cream). Among the desserts i Marroni di San Zeno (parfait with marron glace, hazelnut rum sponge, meringue and tangerine sauce with cinnamon).

With the arrival of autumn is back also every Sunday the appointment with the Lefay Brunch: until the end of April, every Sunday from 12.30 pm La Grande Limonaia offers a virtual journey through the flavors and products of Italian culinary traditions, from pasta to salami, from raw fish to meat, to finish with a great variation of sweet in the “Room of temptations” (55 €, 25 children, info and reservations at 0365-241800).

Meanwhile, the already rich palmarès of the resort was further enriched: Spafinder and Spa Traveller, two of the most authoritative sites on the well being world, rewarded Lefay Lake Garda Best Spa of Italy, leading beyond the threshold of the 40 awards won by the hotel in these early years.
