The king of the great Italian chefs has made a personal dedication to Expo 2015, creating a dish for the Universal Exhibition and sharing the recipe, which is based on a pasta shape imagined by him and created by Carla Latini of Pasta 600.27. Here is the recipe.

THE MARCHESI “TRUCIOLI” WITH SAFFRON

Ingredients for four people

-gr 320 Trucioli
-gr 80 butter
-gr 20 black crunchy rice
-gr 1 saffron stigmas
-drops of lemon
-salt

Realization

Put the saffron in infusion in a little hot water for 20 minutes. Melt the butter in a saucepan over low heat, add a few drops of lemon juice, salt and emulsify with the infusion of water and saffron; keep warm.
Cook the Trucioli in salted water, drain, season with saffron sauce, Serve preferably on a black plate, sprinkle with the grains of black crunchy rice.
