A “made in Garda” char

Char, smoked cheese and stewed artichokes by Andrea Costantini from restaurant “Regio Patio” at the Regina Adelaide, Garda

Ingredients:
Arctic Char 4 slices 140 gr.
Smoked cheese gr. 500
Milk lt. 0.2
Artichokes n. 2
Olives
Extra virgin Garda olive oil, Mixed sprouts

Proceedings
Cut the diced smoked cheese and dissolve in a water bath with milk.
Blend all the ingredients, adjust to taste if necessary and filter. Keep warm.
Apart cleanse the artichokes, cut them in half, remove the center, stuff them with a couple of olives and stew them with extra virgin olive oil keeping them fragrant.
Pass the char in a pan on both sides so that it is with crispy skin and juicy pulp yet.
Presentation:
Pour the soup of smoked cheese in the center of the dish, arrange the artichoke and complete with char.
Garnish with a sprig of sprouts and finish with a drizzle of extra virgin Garda.
