Lake Fish Festival stops in Manerba at “Dalie e Fagioli”

It’s the eleventh round for the Lake Fish Festival 2016, the food and wine event in 15 dinners launched by the Garda Wines and Flavours Road with the Consorzio DOP Garda: nest stop is scheduled for Friday, November 18  stops in Manerba in the halls of the Dalie e Fagioli Agriturismo, undoubtedly one of the most attractive addresses that have recently emerged from the Garda restaurants scene.

It is owned by chef Fabio Mazzolini, who in his previous experience at Quintessenza restaurant in Moniga had also won one Michelin star. He’s particularly interested in the enhancement of local ingredients, which come primarily from small local producers, but also in the use of avant-garde cooking techniques designed precisely to preserve the organoleptic quality of the dishes. Here’s the menu he prepared for the Friday 18 dinner:

 

Lake Garda Tench, Topinambur cream and artichokes

 

Bigoli with Lake Sardines, dried tomatoes, candied lemon and bread crumbs with fennel

 

Whitefish in light crust of bread

Broccoli capers and olives

 

Concertino

 

As always, a winery from the Garda Roas will guest during the evening, matching its wines with the dishes proposed: in this case, the choice fell on Perla del Garda, the Castelvenzago Lonato farm that in 2016 crossed the finish line of his first ten years of activity: an anniversary marked by the conquest of some increasingly important recognitions to the quality of their products, which are focused primarily on Lugana but also on sparkling and red wines.
